Frozen deep dish pie shell, Four eggs, 8 oz sour cream or plain yogurt, 3/4 to 1 cup shredded cheese, any kind, 1/2 to 3/4 cup diced leftover meat (ham, turkey, roast beef, sausage or chicken are all good), 1/2 cup mushrooms (optional)

Way:
1. Stab bottom and sides of chilled dish pie crust along with fork in 5 to 6 places. Prebake crust in 350 degree oven for five to seven minutes. Pre-baking is generally recommended for that crust since it helps in avoiding the sogginess from your crust.
2. As crust is pre-baking, beat some eggs in vessel. Add shredded cheese, sour cream or yogurt, mushrooms and meat (if using). Merge by spatula.
3. Remove pie shell from oven when just lightly browned and add egg mixture in to crust.
4. Return the crust to the oven and bake the same for 50 to 55 minutes at 350 degrees temperature, or until nicely browned on top.
5. Take away from oven and serve warm or at room high temperature.

Hints:
Provide quiche along with soup and a tough roll to get a tasty lunch.
