If you are making your own platters, it is advisable to work out an individual portion size beforehand and then multiply it by the number of guests. This will help you to purchase the right amount of ingredients and avoid the risk of under-catering. It is always better to over-cater slightly than to under-cater because you wouldn't want to run out of food before everyone has served themselves. Catered platters usually hold enough for 8 to 10, or 10 to 12 people, so it is easy to calculate how many platters you will need to order. A general of thumb is to base your calculations on the minimum number of people a catered platter serves so that there will be a little extra in case people are very hungry and eat slightly more than the portion allocated to them.
